My signature home-brew – Quercus Agrifolia is latin for Coast Live Oak. I like well-balanced beers, so I only smoke 7% of the grain bill, using wood that comes from an oak branch that was too close to our roof. What we get is a robust porter with strong chocolate undertones, enhanced slightly by California Coastal Live Oak.
Saison, or Farmhouse Ale, is one of my favorite beer styles. A style that comes from French speaking Belgium, Saisons are known for their yeast that provides this beer with a wonderfully crisp, fruity flavor. I add a few sprigs of fresh rosemary at the end of the boil to give the brew a slight, rosemary finish. A refreshing beer, especially during the hot summer months.
